Crispy Nuts
A few years ago I read the recipe of Crispy Nuts in Nourishing Traditions. However I never really loved nuts. But that has all changed after a co-worker offered me roasted pecans with Kerrygold butter and sea salt! YUM! All my brain thought was "Another way to consume more BUTTER" 😍 They were oh so tasty, an indulgent snack I knew was good for me. So I took to Pinterest to find a recipe. Through my search I found so many variations! Spiced Nuts Maple Cinnamon Lemon Thyme Al

Roasted Vegetables: The Best Food Prep
The best food prep step I do every week is roasting 2 large pans of vegetables. These vegetables are a stable in my diet. I always have veggies precooked to pair with a animal protein for dinner & lunch or add to a frittata for breakfast. I was blessed with a wonderful Grandmother who passed on a not so common love of cold leftovers. So I often eat them cold as a snack 😉I know that's a little weird. Healthifing Recipes
If your family is like my family, Sometimes our biggest struggle isn't changing our personal diets but changing our family's diet. Our Favorite: Jo's Chicken
My wonderful neighbor (who I miss dearly) shared this wonderful recipe with me years ago. We renamed it Jo's chicken after her and now every time we make it (which is at least 3x a month) we remember her and her precious family! God bless all coast guard families (they touch so many lives during their service rotations)! #chicken #Dinner

Make Ahead Breakfast
I try to batch cook a few days of meals for myself each week. I can only eat the same thing so many times, so I do smaller batch meal prep sessions. Any ways more on that in the future. But here is one of today's recipes. I plan on eating a serving of this egg casserole and a pint of my previously posted veggie juice. On a side note, look at the difference in these egg yolks. Both store bought! Can you guess which one is which? #breakfast #Eggs
